Baked Sweet Potatoes with Edamame and Toasted Seeds

A warm, colorful, and balanced lunch dish where sweet potatoes meet protein-rich edamame beans and crunchy seeds. With soft textures, spices, and healthy fats, this meal supports both satiety and hormonal harmony – without compromising on flavor or preparation time.

Ingredients

  • 2 medium sweet potatoes
  • 100 ml frozen edamame beans (thawed and steamed)
  • 1 tbsp olive oil
  • ½ tsp turmeric
  • ½ tsp cumin
  • Salt and pepper
  • 1 tbsp pumpkin seeds or sunflower seeds
  • Fresh parsley or coriander for topping
  • Optional: a little lemon juice

Instructions

  1. Preheat the oven to 200 °C.
  2. Wash the sweet potatoes and bake them whole for 40–45 minutes, until tender.
  3. Meanwhile: steam the edamame beans for 5 minutes, then toss with turmeric, cumin, salt, and a little olive oil.
  4. Toast the seeds in a dry pan for 2–3 minutes until fragrant.
  5. Cut open the baked sweet potatoes, fill with the spiced edamame, and sprinkle with toasted seeds, herbs, and a squeeze of lemon if desired.
